Easy to cook meals for having a balanced diet

Good nutrition is vital to our health, particularly in periods when the immune system may need to fight back. Staying at home for a long period of time may increase our consumption of highly processed food, which are high in fats, sugars, and salt.

Reduced access to fresh food will compromise opportunities to eating properly for a balanced and diverse diet. However, we can still maintain a safe and balanced diet, even with minimal ingredients and pantry choices.

Here are easy to cook meals at home that are rich in vitamins and can increase our immune system:

1. Ginisang Ampalaya

Ginisang Ampalaya is one of the healthiest Filipino recipes. This meal is rich in nutrients and can help lower blood sugar levels.

2. Pinakbet

Pinakbet has different types of vegetables in one dish. This traditional dish is cooked by sautéing vegetables with oil, garlic, and onion. And sometimes, it may include pork or any choice of protein.

3. Lumpiang Ubod

Lumpiang Ubod is rich in vitamin A which helps in promoting good eye health and also boosts the immune system. Ingredients used in this dish are lettuce, sinkamas, carrot, spring onions, and ubod or edible coconut pith.

4. Enseladang Talong

Enseladang talong is the perfect side dish for heavier protein dishes such as grilled pork and fish. This dish is made up of eggplant, tomatoes, onions, and a touch of bagoong.

5. Chicken Tinola

One of Tinola’s main ingredient, sayote, contains high amounts of folic acid – which is why it is highly advisable for pregnant moms. This dish can also be cooked with semi-ripened papaya and malunggay leaves, known to be a potent milk-boosting supplement.

6. Ginisang Munggo

This dish contains a mix of bitter melon and monggo beans. It has several health benefits like iron, magnesium, folate, thiamine, manganese, and phosphorus.
